Forge Wood Fired Pizza, Castlegregory, Co. Kerry

Forge began in 2019 as a shipping container standing in the vegetable and herb garden behind Gregory's Garden, and it still trades from that garden. It makes twelve-inch Neapolitan sourdough pizza on slowly fermented dough in a wood oven, and it has since grown from the one container into four sites.

The conceit, and it is a good one, is that every pizza is named after a wave or a surf break on Brandon Bay, the horseshoe bay it sits on. So the list reads Banna Beach, Brandon Pier, Drain Pipe, Inch Reef, Stoney Gap, Sandy Bay, Sandy Lane, Stradbally, Hells Gate, Gary William, Mossies and Gowlane.

The sourcing is named rather than gestured at: Toonsbridge Dairy fior di latte, stracciatella and smoked scamorza, Gubbeen chorizo, Parmigiano Reggiano, Calabrian nduja and Italian prosciutto crudo. Seating is in the garden, so it depends on the weather.

On the menu

Twelve inches only, from twelve euro to nineteen euro fifty. Brandon Pier is the marinara with no cheese at the bottom of the range, Drain Pipe the margherita. Sandy Bay is smoked pancetta, black pepper and honey; Gary William is scamorza, nduja and honey; Mossies is Gubbeen chorizo with piquillo peppers and pickled chillies; Stradbally is prosciutto, rocket, balsamic and toasted pine nuts; Hells Gate at the top is pepperoni, chorizo, nduja and fresh jalapeños.

Sourdough garlic bread is eight euro fifty, or nine euro fifty with mozzarella, with larger sizes. Dips are two euro. Extra toppings run from one euro for most vegetables to three euro fifty for meats. Banna Beach and Brandon Pier are vegan, and Drain Pipe and 3 Peaks are vegetarian.
